Bring to Room Temp – Let the chops sit out for 20–30 minutes before cooking so they heat evenly.
Season Generously – Lamb pairs beautifully with kosher salt, cracked pepper, garlic, rosemary, or thyme.
Sear Hot & Fast – Grill or pan-sear over high heat, about 3–4 minutes per side, for a golden crust.
Aim for Medium-Rare – Pull at 130–135°F for juicy, tender lamb (medium if you prefer them to be a little more done).
Rest Before Serving – Let chops rest 5 minutes to keep the juices in every bite.
